Warm 200–250ml of oat milk, almond milk, or water to around 70°C — hot, but not boiling. Boiling water can slightly alter the flavour compounds in cacao. Oat milk adds a natural sweetness that complements the earthy cacao beautifully.
Add the shaved cacao to your warm liquid and blend for 30–45 seconds, or whisk vigorously until fully combined and frothy. The fat in cacao (cacao butter) emulsifies with the liquid creating a rich, smooth texture — like a fine hot chocolate, but without any sugar.
